Native to the Mediterranean region, Rosemary is a key ingredient in Cretan cuisine. It will give a special relaxing aroma and its special intense taste to your cooking. This popular herb goes well with meat and fish and will give a spicy taste to soups while boosting your meal with its medicinal properties!
Rosemary has long been recommended for strengthening the brain and memory. The herb contains substances that are useful for improving digestion and increasing circulation.
Although it is not a medicine, and should not be treated like one, this amazing herb has a lot to offer to your body and well-being.
1.Place 1-2g of dried herb in a container that closes*.
2.Add 200ml (a cup) of hot water, temperature 90oC*.
3. We wait for three to five minutes, allowing the herb to bring out the hidden
power from within! The time depends on how “strong” we want our
drink, the longer we leave it the stronger.
4. Remove the herb from the container.</p >
Our drink is ready to enjoy! If we prefer sweeter flavors, we add a little honey.
* We want our water to be just before the boiling point in order not to lose the essential oils of our herb with the vapors, while the container must be closed in order to capture properties and aromas in our hot mug.
We follow the same steps as in the preparation of hot with only difference is that we double the dose of the herb. At the end, we add our tea to a glass full of ice and enjoy it plain or with a little honey!
Rosemary is a bush with fragrant, evergreen, needle-like leaves and white, pink, purple, or blue flowers. Its name “rosemary” derives from the Latin words “ros”, meaning “dew” and “marinus,” meaning “sea” – “dew of the sea”, as it’s often growing near the sea.
Its aroma and strong taste have been known to native civilizations since at least 500 B.C. Ancient Egyptians, Greeks and Romans used it on various occasions, such as in the decoration of buildings and temples or burning it as an incense and of course in cooking.
In Greek mythology, it’s said to have been draped around the Greek goddess Aphrodite when she rose from the sea. Another legend says that the Virgin Mary spread her blue cloak over a white-blossomed rosemary bush while she was resting, and the flowers turned blue. The shrub then became known as the “Rose of Mary”.
Rosemary besides the myths and legends about it is one of the key ingredients in Mediterranean cuisine. Especially here in Crete is one of our favorites. It is often used in marinades for meat, but it also goes well with fish, vegetables, and rice. Try it with legumes such as black beans or chickpeas or maybe in your soups, to add a spicy taste.
We highly recommend you to try it with hochlioi boubouristoi (burbling snails) and barbounia savoro (red mullet with savory sauce), and of course lamb, one of Cretan’s favorites meat.
